Ubuntu Server "Cannot display this video mode"

Ubuntu Server
Version: 12.04.2
Fresh Install.

My computer boots, gets through grub, loads linux....then shows "cannot display this video mode"

I've found various fixes for this, which seem to be based on grub not displaying, which is not my problem.

I use putty to connect to it, and it's fine, but I can't use a monitor.

I have tried a 15" Dell monitor, and my 23" monitor which says "out of range".

I edited grub so it has both
GRUB_CMDLINE_LINE="vga=0x301"
and
GRUB_GFXMODE=640x480
and neither seems to have any affect after running update-grub.

I'd like to reiterate, my problem is NOT with grub loading, as that works fine, but with the linux command line loading.
